Kofta means fried balls of various ingredients, which is popular in Indian cuisine. It comes from the popular Punjabi cuisine and can also be called the malai kofta recipe.  Malai Kofta is one of the most sought-after Indian dishes in restaurants around the world. This dish is prepared on special occasions and is mainly served with roti, chapati, and naan.

A creamy and spicy curry masala recipe served with stuffed paneer balls. Chopped cashews and almonds are used as stuffing.  These fried paneer kofta balls are simmered in onion tomato gravy.  This recipe is made from grated paneer.  For delicious taste, we are adding a few spices. Today I will teach you how to make restaurant-style kofta curry at home.

 INGREDIENTS 


 For Kofta


 1. Paneer - 250 grams 

 2. Potato - 2 

 3.  Cashew - 6-7 

 4. Raisins - 15-20 

 5. Salt - as per taste 

 6. Arrowroot — 2- 3 tbsp

 7. Oil 


 For Curry


1. Curd - 1 cup

 2. Tomatoes – 3-4

 3. Green chili - 2

 4. Ginger - 1-inch long piece

 5. Oil - 1-2 tbsp

 6. Asafoetida - Pinch

 7. Cumin - half a tsp

 8. Turmeric powder - half a tsp

 9. Coriander powder – 1 tsp

 10. Kashmiri chili powder - 1/4 tsp

 11. Cream or Malai - half cup

 12. Garam Masala -  1/4 tsp

 13. Green Coriander – chopped


INSTRUCTIONS 


(1) Grate the cheese.  Peel the potatoes and break them finely with your hands. Mix paneer, potato, arrowroot, and salt, knead it like dough by kneading with hands, break a lemon-sized piece from the mixture, and make a round shape (you can fill 1 raisin and 2-3 cashew pieces in these round shapes).  12-15 balls will be made from this dough.


(2)Put oil in the pan and heat it.  Put the balls of the mixture one by one in the pan.  Fry 4-5 koftas at a time.  Fry them till they turn brown.  After they turn brown, take out the koftas and keep them on a plate. 


(3) Likewise prepare all the koftas by frying them.  Koftas are ready. To prepare vegetable curry


(4)Wash tomatoes and cut them into big pieces, Grind tomatoes, green chilies, and ginger finely with a mixer.


(5)Put oil in the pan and heat it.  Put asafoetida and cumin seeds in hot oil.  After roasting the cumin, add turmeric powder, and coriander powder, stir with a spoon, and fry by adding tomato paste, also add chili powder, after 3 minutes add curd and stir the spices and fry until the spices boil again. 


(6) Come on, now add cream or cream to this spice and fry the spice until oil starts floating on top of the spice.


(7)Add water as required or 1-2 cups.  Keep stirring the gravy with a spoon till it starts boiling.  Add garam masala and salt to the curry, curry for paneer kofta is ready, add kofta to the curry and mix, turn off the fire and keep the curry covered for 2-3 minutes.  


(8)Paneer Kofta curry is ready.


(9)Take out the vegetable of Paneer Koftas in a bowl, and put green coriander on top to decorate the vegetable.  


(10) Serve paneer kofta curry with chapatti, naan, or parantha and eat.
