Roadside entries in India are called dhabas. They have a very different style of cooking and their dishes are high in spices and oil.  Their taste is better than a big restaurant. This dhaba-style paneer masala is one of the dishes that I love a lot.


To make this paneer masala recipe, paneer cubes are simmered in an onion-tomato-based curry, with a few spices added to make it tastier. This Paneer Butter Masala recipe is a rich and creamy dish.


This paneer curry is protein rich and creamy to the brim.  This is served with parathas and naan.  I like it with cumin rice or a light veg pulao and leave it as you like.

 INGREDIENTS 


 1. Paneer - 250 grams

 2. Poppy seeds or cashew - 2 tbsp

3.  Tomato - 

 4. Green chili -2-3

5.  Ginger - 1-inch long piece

 6. Fresh curd - small bowl

 7. Ghee - 3-4 tbsp

 8. Asafoetida - 1 pinch

 9. Cumin - half a teaspoon

10. Turmeric powder - 1/4 tsp

11. Coriander powder - 1 tsp

 12. Red chili powder - 1/2 tsp

 13. Garam Masala - 1/4 tsp

14. Salt - as per taste 

15. Green Coriander - finely chopped


INSTRUCTIONS 


(1) Cut paneer into 1 1/2 inch wide by 1 1/2 inch long pieces. Wash poppy seeds or cashew nuts and soak them in water for 1 hour.  


(2)Grind the soaked poppy seeds or cashews finely and keep them in a bowl.


(3) Grind tomatoes, green chilies, and ginger in a mixer and make a paste, add curd to this paste. Once again run the mixer and churn it.


(4) Put ghee in a pan and heat it.  Put 4-5 pieces of paneer in this hot ghee and fry till it turns brown on both sides.  


(5)Take out the fried paneer on a plate.  Prepare all the paneer by frying it in the same way.


(6)Put asafoetida and cumin in the remaining ghee.  After roasting cumin, mix turmeric powder, coriander powder, and red chili powder and stir with a spoon, add poppy seeds or cashew paste and fry for 2-3 minutes.


(7)  Add curd tomato paste to this roasted spices and fry the spices until ghee starts floating on top of the spices.


(8) Now put water and salt in this spice to dilute the curry according to your taste.  When the gravy starts boiling, add fried paneer and garam masala and cook for 2-3 minutes stirring with a spoon.


(9)  Your vegetable masala paneer is ready


(10) Take out the vegetable in a bowl and garnish it with green coriander.  


(11)Serve hot garam masala paneer, paratha, naan, or chapati and rice with anyone and eat
